Cross country is any flight where you land at a differnt airport than the one you departed from...Some certificats and ratings require certain amounts of cross time to airports greater than 50 miles.
I'd say - that it's your logbook and you can log those flights however you want. You could log each individual leg, or you could log the entire flight, OR, you could choose not to log it at all  It's really up to you...
